Shirley Syiek's Banana Bread
Mom's was always baking breads and muffins to bring to different occaisions. Aftrer a while, she learned to bake an extra one for us. She learned this after finding that I couldn't resist the wonderful aroma, and would cut into the loaf before it was even cool!
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1/2 cup shortening or oil
1 cup sugar
2 eggs
1/2 cup chopped walnuts
1 tsp vanilla
1/2 cup milk
3 bananas mashed
Sift together flour, baking soda, powder, salt. Set aside. Cream shortening (or add oil) Blend with sugar and vanilla. Add eggs one at a time, and beat. Add flour mixture, alternating with bananas and milk. Add walnuts.
Pour in greased loaf pan, or muffin tin. Bake at 375. 1 hour for loaves; 25-30 min for muffins. Or until knife comes out clean
