Shirley Syiek's Minestrone
1T Olive Oil
1 large onion chopped
1 large garlic clove pressed
2 celery ribs finely chopped
2 carrots finely chopped
1 1/2 c zuccini cubed (optional)
1 c lentils (optional)
1 can white kidney beans
1 can red kidney beans
8 cups tomatoes chopped
5 cups water
1 can chicken broth
salt & pepper to taste
3/4 c. ditalini or elbow macaroni
1/2 c chopped parsley
basil
Add oil in heated pot. Saute the onion and garlic, add veggies, water, broth, s+p,.
Cover and bring to a boil, simmer 10 min.
Add pasta. cook ~7 min
Remove from heat, stir in parsley and basil.
