  • 3 tablespoons nonfat mayonnaise

  • 1 tablespoon sun-dried tomato paste

  • 8 thin slices multigrain bread

  • 6 ounces oven-roasted or smoked sliced deli turkey breast, about 8 slices

  • ½ avocado, peeled and pitted

  • ½ large cucumber, unpeeled

  • ½ cup roasted red bell pepper strips

  • 1 cup baby spinach

Directions

  1. Stir the mayonnaise and tomato paste together.

  2. Spread 1 tablespoon of the mayonnaise mixture on each 4 slices of the bread. Divide the turkey among the bread slices.

  3. Cut the avocado and cucumber 8 slices each. Top the turkey with 2 slices of avocado and cucumber.

  4. Divide the pepper strips among the 4 sandwiches. Top each with ¼ cup spinach and a slice of multigrain bread.
