Stuffed Squash by Nazira Syiek
Wash 1 1/2 cups rice.
Season with salt, pepper and allspice.
Add 1 lb ground lamb, sauted in separate pan to remove fat
Mix well.
Wash squash. Drill out (save insides for Koosa Nutta). Soak in water.
Pound 4 garlic with a little salt, add to water. Sprinkle with spearmint. Remove squash (save the water).
Put a little of the stuffing and bang a little. Do not push stuffing in with you fingers. Do not overstuff, give rite room to expand.
Put in a pan with 1 can tomato paste dissolved with water saved, and 1/2 can tomatoes, or cut up fresh tomatoes.
Put cover on and cook for about 45 mins.
Koosa Nutta
Saute onion and garlic (add 1 egg if desired). Add saved borings. Stir. Saute a little. Drain off excess water from Add 1/2 can tomato paste dissolved with some of the water from soaking the squash previously. Add a little fresh tomato if desired. Salt and pepper to taste.
